Some people walk the globe in search of the perfect diamond or vacation spot or countless other things. ME? I search for the perfect patty melt.
So far, my favorite one can be found at a small local diner built in the 50s near Manassas, Virginia called the Yorkshire Restaurant.
They use fresh ground beef and the requisite rye bread, sautéed onions and cheese (they replace the more standard Swiss with American) but the real kicker is the use of (gulp) yellow mustard.
Usually, I can’t stand the stuff. In any other use it’s just yellow spackle but on their melt it is perfectly balanced with the other ingredients.
